The first recipe I decided to make from Viva Vegan! by Terry Hope Romero were the Black Bean & Sweet Potato Tamales. They rocked! I loved them and they are definitely worth the effort. It is a bit time consuming, especially until you get the hang of it. The chipotle seasoned beans mixed with the cumin-spiced sweet potatoes is a winning combination. These tamales were nice and moist too.
I’ve made tamales twice now and the second time I made a double batch. I shared some and I froze a whole bunch of them so we can have quick lunches when there are no leftovers. The tamales reheated great. I will definitely make these again when my supply in the freezer runs out. I shared tamales with friends and co-workers. They were a big hit!
Of course I needed something to drink (non-alcoholic of course) with the tamales so I made the Real Brown Sugar Limeade from Viva Vegan! I made it with Melissa’s Piloncillo (Real Brown Sugar Cones) which I found at Meijer. I didn’t chop the piloncillo and did the soaking method to let it dissolve. This limeade was so refreshing and tasty. I’m always tempted to make the limeade when Rob is out auto-crossing so I can have it all to myself. I usually, not always, try to save him some.
I can’t wait to try something else from this cookbook. If the other recipes are half as good as these, I’ll be thrilled.
