Last night we had Bazu’s Groundnut Stew for dinner and it was yummy! The stew has a mixture of onions, carrots, yukon gold potatoes, fresh okra, corn (cut off the cob), tomatoes, and freshly roasted peanuts. I had to roast an extra handful of peanuts because I knew I’d snack on them and I did! The only thing I’d do differently next time is add more chile peppers. I went a little weak on the peppers because I didn’t want to over-spice it. The stew took on a bit of a pink color after I mixed in the natural peanut butter. Bazu was right, the stew does not have a peanut flavor like you might expect. It was very savory and delicious.
Unfortunately, I didn’t have any fufu so I served mine with basmati rice. Since we weren’t going to be dipping fufu into it, I didn’t thin the stew out and kept it super thick. I ate it with a fork…does that still count as a stew? Rob had two helpings and asked when I’m going to make it again. I would had a second helping if I hadn’t been snacking on all those peanuts while I was cooking! Really, any way you make this….as a stew….or super thick like this, it will be tasty 😀
