Buddha's Delight

Last night I made Buddha’ Delight for dinner. You can find the recipe in Vegetariana by Nava Atlas. It was delicious and I really liked the Basic Chinese Sauce used in this dish. The Basic Chinese Sauce recipe is also used in several other recipes in the book. I’ll have to try some of those other recipes! Rob got to choose the rice this time and he picked white basmati. One of these days he’ll eventually pick a brown rice!! I know it!!

Our Buddha’s Delight consisted of broccoli, carrots, cauliflower, celery, onions, red and green pepper, baby corn, bamboo shoots, water chestnuts, mushrooms, and the handful of snow peas that were left. I heaped on more vegetables after this picture was taken πŸ˜€

    That looks really yummy! I will have to check out that book! I got another book of hers out of the library (Vegetarian Family Cookbook) and thought it was fun.

    I *love* Chinese food, but I don’t like thinking about all of the crap they must put in it in the restaurants…I would love to make my own and have it taste halfway decent.

    That does look really tasty- I haven’t had Chinese food in a while! I’m sorry my comments don’t come through… I wonder why? Maybe because I don’t enter my email address? I’ll try entering it this time and see if it makes a difference. Have a great weekend!

    Nikki, I know what you mean about ordering Chinese Food out. I’m always leary of what ingredients might be used. Rob said this tasted good the next day too. One of his co-workers even commented that his lunch smelled good. It’s an easy recipe to make and you’ll spend most of your time chopping veggies. We split the chopping duties. I liked it so much that I’m probably going to make it again next week.

    My local Chinese restaurant does Buddha’s delight and I often order it as a takeaway. He does his differently with lots of mushroooms including straw mushrooms, mixed with bok choy and other veggies with noodles not rice.

    That’s a knockout photo of a spectacular dish, Emmy. Buddha never had it so good… well, maybe he did! Lucky for him. And lucky for Rob and you to enjoy such tasty vittles. YUMMY! By the way, i *heart* baby corn. I could eat those day and night, night and day. Something about their size coupled with great taste… i kind of have a soft spot for mandarin oranges (canned, ugh, i know!!) in a similar vein…
