Chunky Corn Chowder

This recipe can be found in the cookbook Calci-Yum! by David & Rochelle Bronfman. I got the book as a bonus when I subscribed to the Vegetarian Journal (Vegetarian Resource Group) a few years ago. This chowder is chock full of vegetables including yams and okra. I use corn cut off the cob. I love this time of year when corn is cheap and plentiful. It has been running anywhere from $2 to $4 a dozen depending on if you buy it from a store or at a farm stand.

    I hated having to sell our house. It was so frustrating because I insisted that the house always be immaculate and model perfect. It drove Marty crazy that he couldn’t wipe his hands on the towels in the bathroom and that all of our toiletries were “hidden”. There was much more to it than just that, but you know what, I think it really helps.

    When we had open houses, I left a big thermos (like a 4 gallon one) with a spout with hot apple cider and a bunch of homemade cookies on the counter. It was a huge hit!

    Your corn chowder looks great. Love all the different colors. Yum!
