Eggless Sandwich Filling on Ezekiel Bread

The recipe for Eggless Sandwich Filling can be found in The Everyday Vegan cookbook. I finally got around to making this for Rob. I won’t eat anything made with vegan mayo. It’s just a personal preference. I don’t mind using it to make something, even if I won’t eat it.

For the vegan mayo, I used Organic Vegenaise. I also used dried dill but half the amount called for. I find that Penzey Spices tend to be a bit more intense and flavorful so I sometimes adjust the seasonings based on that. Rob loved this and ate it on toasted Ezekiel Bread. He asked me to make this again next week. In case anyone was wondering, Rob isn’t a cook and he’s the first one to admit that! Of course, he helps out by chopping vegetables and more importantly, by loading the dishwasher 😀

    I love Ezikiel bread. Did I spell that right? In Syracuse, I can only get it frozen and it costs, like, $4.99. I miss the days of being able to pop over to Trader Joe’s and picking up a loaf for $2.29. I think it’s my favorite bread!

    Bazu, wow, $4.99! I guess I should stop complaining when TJ’s has it out of stock for $2.99 and I have to pay $3.49 at Whole Foods! LOL I’m with you – it’s one of our favorites too. I’ve even got my parents eating Ezekiel Bread now. My mom loves to use it for toast. It’s good stuff 🙂

    I love Ezekiel Bread! I also love the tortillas and pita bread (you can taste the little flecks of carrot in it).

    Looks really good! I will have to make this for my daughter who used to love egg salad sandwiches before she was vegan. She’ll love this. I’m with you on the mayo… although I like the taste but do not want that much fat!

    I love your deal with Rob….he chops and cleans and you make great food for him! Loveit!

    every little bit helps, rob — especially tasks mentioned! i might try this recipe if i get brave — i’ve never liked eggs, so there’s one strike, and i’m kinda afraid of tofu (tho i’m getting better) i think i’ll play like you and make it for art to try! :o) everyone says it’s yummy….

    I just joined up with a bulk buying club and am now able to get Ezekiel bread. On my last order, I purchased a case (6 loaves) at $2.99/loaf. I can’t get it anywhere here unless I drive 40 min away and it’s about $5/loaf.

    I’m sort of not really into the vegan mayo thing either. There’s something peculiar about the taste.
