We had fried tofu sandwiches with corn last night for dinner. You can find the recipe on Kit and Ian’s site Vegan Dinner. It was delicious and I even ate an extra piece of the tofu by itself. Yum! I used fresh corn cut off the cob instead of frozen. I think the corn season is over now, especially with this cold front moving in. Good thing we got a dozen ears this past weekend. I also used fresh sage but I’m sure it would work with dried sage too. I just happened to have fresh sage on hand this week. We’ll definitely make this again.
I didn’t have any sandwich buns so I used Ezekiel Bread instead. We topped ours with lettuce, red onion, and tomato. Rob of course put mustard on his. Blah! I’m not a mustard fan and will only eat things containing mustard occassionally. This is Rob’s current favorite mustard to use:
I also realized I’ve been slow to post my pumpkin carvings. I know my mom wanted to see some of the ones I’ve been doing. Here’s a recent one. Again, I used the pumpkin pattern from the Pumpkin Masters carving kit. The pattern name is “Zombie.” Not to sound conceited but I think it turned out pretty cool. 😀
