I used romaine lettuce, baby spinach, cucumbers, red cabbage, radish, and carrots. I had to base my salad ingredients on how the produce looked at the market.
I used the Italian Dressing recipe from The Saucy Vegetarian by Jo Stepaniak. Even though I made the dressing, I didn't use it. I don't like salad dressing but my husband and parents love this dressing! It's easy to make too.
We also used Bac'uns, which are vegan "bacon" bits. Oddly enough, this is one case where the organic product is not better. Organic Bac'uns tend to crumble and end up being more of a vegan "bacon" dust rather than bits.
You probably can't tell from the picture, but this is a huge bowl of salad. The serving bowl measures 12-inches across. I got the bowl for Christmas a few years ago and it came from Crate & Barrel.
