Garden Update and Vegetable Fried Rice

A lot of the produce from my container garden gets used before I can take a picture of it.  However, today I have a picture of okra from my garden.  I think I’m going to use it this weekend when I make some more Chunky Corn Chowder.


Also, I made some vegetable fried rice. Normally, I use more colorful ingredients in fried rice but I had to use what I had on hand. In other words, I ate the pea pods and colored pepper strips as a snack! I like to use bamboo shoots, water chestnuts, baby corn, bean sprouts, mushrooms, pea pods, scallions, and colored pepper.  Occasionally I’ll add tofu but usually I just stick with veggies.

    The fried rice looks great, even without the colorful ingredients! And I looooove okra. We hardly ever get any fresh here, that’s a good idea about growing them yourself. Have a great weekend!

    I love okra but I’ve only had it fried or in soups. How else do you use it?

    Midwest Vegan, I usually use it in soups and Indian recipes. I’ve also seen it used in Middle Eastern cooking. I had a delicious side dish of okra while out at this one Middle Eastern restaurant. It was big pieces of okra with tomatoes, onions, and a bunch of seasonings that I couldn’t quite figure out. Yum!

    Oooh, okra! There’s something i’ve never tried. And you GROW it. I love that. Some day i’ll have a garden and i know from whom to ask advice … Very nice on the fried rice, Emmy! I am a big fan of both bamboo shoots and water chestnuts! Yummmmmmmmmmy!

    Pea pods never last very long in my house either. Your fried rice looks really delicious – even without the color.

    I don’t like okra though. Best of luck to you with that awful plant.
