Hawaiian "Chicken"

Hawaiian “Chicken” is mock chicken mixed with a sweet and sour pineapple sauce and green pepper. I don’t have the recipe typed out at this time but I veganized it from a fundraiser/community cookbook.

I used the Chiken Cutlets that you can buy from the Mail Order Catalog for Healthy Eating. I re-hydrated them in Frontier Vegetarian Chicken Broth. It comes in powdered form and you just add it to boiling water. The broth powder is a bit high on the sodium side so it’s not something I use on a regular basis.

We don’t eat meat analogs all the time but we do enjoy them every now and then. The texture isn’t too freaky with the mock chicken. It’s basically a bunch of layers of textured soy protein compacted. That’s the best way I can describe it.

I served it with white basmati rice. I had boxes stacked up in front of my pantry shelf in the basement so I couldn’t get to the brown rice!

    Wow, that looks very tasty. I’ve got a few dry packages like that in my pantry that I should use up.

    It is always cool to see recipe ideas.

    Looks great! I think the white rice works better than the brown would have for the picture.
