Homemade Biscuits

This recipe is from How It All Vegan. I believe the official recipe title is “Easy Biscuits”. They’re very quick to make and very tasty. I cut them out with a biscuit cutter. I made two batches so I had extras to take down to my parents and grandma. The biscuits also freeze well. I usually eat them with American Spoon Early Glow Strawberry Jam and sometimes Whipped Earth Balance.

American Spoon is a mail/web order catalog but they also have store locations in Michigan. The Detroit area store is located in Northville. Their strawberry jam is worth every penny. It’s absolutely delicious. I buy American Spoon jams for my parents and grandma too. They were using junk like Smuckers that has high fructose corn syrup in it. Yuck! American Spoon jams are just fruit, pectin, and lemon juice.

 I have made my own jam occasionally but I’ve been too lazy to do that. And the fact that if I bring home fruit fresh from the farm market, it gets eaten right away before I can cook or bake with it.

    What lovely biscuits you have. I haven’t enjoyed biscuits in a long, long time. If you look long enough at the photo, the biscuits look like eyes and part of the plate a mouth. OK… is your picture smiling at me, or is it just too early in the a.m. for me?

    Those look so light and lovely. My biscuits are always really heavy. Probably because I try to make them with whole wheat pastry flour, or maybe I just mix them wrong. I don’t know. Yours look awesome, though! And that jam sounds really yummy… and now I want fresh strawberry jam. Mmmm.

    Hi RP, no question is dumb. Sorry if I wasn’t clear, the recipe can be found in the cookbook How It All Vegan. I usually don’t type out recipes that can be found in nationally published cookbooks. Check your local library, they may have a copy.
