I really like the Hot and Sour Soup recipe from The Everyday Food Cookbook. I checked this cookbook out of the library and renewed it twice before finally deciding to buy it. A lot of the recipes are easily veganized such as this soup. I used vegetable broth instead of chicken broth, omitted the egg, and added a little extra tofu and shiitake mushrooms.
