My godmother came over for a visit today and we had this pie for dessert. The pie was delicious. Everyone who tries this pie goes crazy for it. My godmother’s son (who is my mom’s godson) recently opened a vegan/vegetarian market and cafe in Portland, OR called Proper Eats. It’s located in the St. John’s neighborhood. I’m so jealous. It looks like a really cool place!!! Make sure to support Proper Eats if you’re in the Portland area 😀
The pie crust was nice and flaky. I’ve had excellent luck with the pie crust recipe from The Compassionate Cook Cookbook. I use Spectrum Organic Shortening in the pie crust. The pecans for the crumb topping came from Sunnyland Farms.
For lunch, I made individual pizzas topped with onions, mushrooms, and green peppers. I made a double batch so everyone could take extras home with them.
