This recipe can be found in The Everday Vegan by Dreena Burton. I doubled the recipe and made two loafs. I also added walnuts. This bread freezes well so I like to keep it on hand. I like to eat it for breakfast and had a piece of it this morning before we went to the farm market.
I have two loaf pans but they are slightly different. I’m not sure of the maker of the pan on the left but it could be Glasbake. I bought it at an estate sale earlier this year. The pan on the right is Pyrex. I’ve had this for a few years. I found it at a thrift store.
