Rob and I have been so busy. I’ve been making a lot of simple and quick foods. I made some Spicy Rice Noodles with Spinach, inspired from a recipe from the Bangkok to Bali Cookbook. Caputo’s had a 1 lb. bag of baby spinach on sale for $1.50. I had enough to make this and snack on some spinach while I cooked. The noodles are tossed with ginger, Thai chilies, garlic, low-sodium tamari, and just a teeny tiny pinch of sugar. Yum! For the oil, I used peanut oil.
