Vegan Onion Rings and Onion Pakodas

Ok, this post is definitely not about “healthy” food but it sure is tasty. I’m talking about battered and fried onions.  I decided to try out making some onion rings using the “Batter Fried Mushrooms and Veggies” recipe from the Peace in Every Bite Cookbook by Two Moons. Oh my goodness. They were so tasty. I probably would dip the onions in a little more batter next time but even for the first run of this recipe  it turned out great. Rob said these onion rings were light and crispy and I agree. Next time my parents visit, I am going to make these. My dad loves onion rings. 

Onion Rings

A few weeks ago, I decided to make some Onion Pakodas.  I used the recipe from the Sizzling Bites Blog. This blog only has a few posts and it hasn’t been updated recently. I don’t even remember how I came across it but I’m glad I did. The onion pakodas were yummy.  I get my chickpea flour (besan) at the Middle East Bakery in Chicago or Caputo’s grocery store.  They are really easy to make too.  Definitely a make again recipe.

    Those onion rings look so good. I was with my parents in CA a few months ago and my Dad ordered a huge plate of onion rings, like two serving platters put together, and I couldn’t eat them because they had dairy in them. I’ve been craving them ever since!

    I’ve never seen homemade onion rings turn out so well!! They look fantastic 🙂
