It’s called Pasta Bake because you make a very thin tomato sauce and pour it over the cooked noodles and veggies and then bake it. As it bakes, the sauce literally bakes on the noodles, hence the reddish tone of the pasta.
The veggies in this dish are: mushrooms, onions*, baby zucchini*, baby yellow squash*, carrots*, red pepper*, yellow pepper* and celery. * = Bought at farm market.
To bake it, I use large foil pans that I buy at Sam’s Club. I also made enough sauce and veggies for my parents. I also gave them a bag of penne pasta so they could easily create it at their home. My parents aren’t vegetarian or vegan but they love all the non-spicy food I make.
The recipe for the pie comes from Vegan with a Vengeance. The motivation to make the pie came from Urban Vegan’s post and my husband seeing that post. LOL The pie was really yummy. I had a little more chocolate left for the top than I had expected in the double boiler. I used Newman Alphabet Cookies for the crust. Good thing I bought two bags because I kept eating the cookies while I made this pie. I get the Wheat-Free, Dairy-Free ones.
