My parents were helping me move some stuff yesterday as we prepare to put our place on the market. So for lunch I made Taco Trays per my mom’s request.
Casa Fiesta makes these great taco trays which mix things up over traditional tacos. I made a mix of black beans, onions, green pepper, and Penzey’s Fajita Seasoning. Then I added the spiced bean/veggie mix to the tray and topped it with lettuce, tomatoes (from the garden), and Vegan Gourmet Monterey Jack cheeze.
This was the first time my parents tried the Vegan Gourmet Monterey Jack and they liked it a lot. My mom’s reaction was “Mmmmm hmmmm good.” I should mention that my parents are not vegetarian or vegan.

I also made some Spicy Guacamole. You can find the recipe over at Coconut Lime. It’s not a vegan blog but there are a lot of vegan friendly recipes. Definitely a blog worth checking out :)The Guacamole was delicious! I used Jalapenos instead of Serrano peppers because that’s what I had on hand. I also used more of the tomatoes from the garden.
